As co-founder of the Mi Cocina restaurant chain, Carolina Galvan-Rodriguez got her culinary PhD in Tex-Mex. Now she gets to do it "her way" ...and scores with Carolina's.

The restaurant sports fresh, bold, earthy ingredients as Carolina changes up her Tex-Mex style and incorprates more authentic Mexican food to the menu. The authenticity spreads through her Sopes, Tacos Campiones, y Pollo a Parilla, but does not stop there. Carolina's freshly made Mole sauce incorporates 34 different ingredients to top off some incredible chicken enchiladas. 

The ambiance of the restaurant is unique as well and combines the feel of hacienda, farmhouse, chic, and modern touches to compliment Carolina's cooking style.
